It’s Italian. It’s keto friendly. It’s Houlihan’s Butternut Squash and Sausage Lasagna with Zoodles!
Hey there, darlings! It’s been a minute. Or a year, or whatever.
They forget to tell you that you’ll have to juggle business with pleasure when the real world takes over. There have been so many days I could have blogged, but something else in the real world took priority. But, here I am now, and I’ve got something tasty up my sleeve to share with y’all.
My buddies at Influenster must have had a little bird whispering in their ears when they picked me as one of the reviewers of the new Spiralized menu at Houlihans. Almost two months ago I put the bread down and picked up MyFitnessPal to start a ketogenic way of life. But we’ll talk about that later; let’s get on to the food!

I bribed a friend to go with me so we could try out two different entrees: the Butternut Squash and Sausage Lasagna and the Sweet Potato Mexicali Flatbread.
Eating keto style isn’t all butterflies and rainbows. There are some days where I seriously think carbs are lobbying in my brain, trying to win back my will power’s vote. However, I get to have my cake and eat it too–so to speak–when it comes to this Butternut Squash and Sausage Lasagna dish from Houlihans.
With the thin layers of squash taking place of the carb-loaded pasta typical in lasagna, this spicy savory treat is a guilt-free pleasure.
But let’s not forget this HouZoodles side paired with the lasagna:
You’re looking at perfectly-cooked zucchini, spiralized and tossed with a delicious, light pesto sauce. I don’t know how Houlihan’s creates their pesto (short of sorcery), but I have failed again and again to create an acceptable mock of it at home. Guess it just means I’ll have to go back to Houlihans for more!
My girlfriend indulged in the flatbread, and noted the delicious mix of the sweet spiralized sweet potato along with the somewhat-spicy avocado sauce.
While traditional flatbreads are a nope on keto and I can’t necessarily indulge, it did photograph quite beautifully!
